Plant caraway seeds in well-draining, fertile soil in a sunny spot. Sow seeds about 1/4 inch deep and space them 6-8 inches apart. Caraway prefers cooler temperatures, around 60°F to 70°F (15°C to 21°C), and can be planted in early spring or late summer. Keep the soil consistently moist, but not waterlogged, especially during dry periods. Caraway is a hardy biennial, so it may take 2 years to fully mature and produce seeds. Thin seedlings to reduce crowding and encourage stronger growth. Fertilize lightly with a balanced fertilizer, but avoid overfeeding. Mulch to retain moisture and control weeds. Harvest caraway seeds in late summer or early fall, when the seed heads turn brown and dry.
